Green Pepper Steak

Ingredients:
  • 2 pounds flank (or tip, I think we use tip) steak - sliced into bite size pieces
  • 2 green bell peppers - sliced into bite size pieces
  • 1 can sliced or diced water chestnuts - drained
  • 2 scallions - chopped (optional)
Marinade:
  • 3/4 cup soy sauce
  • 6 tablespoons cooking sherry
  • 2 tablespoons sugar
  • 6 tablespoons cornstarch
  • 3/4 cup water
  • 4 tablespoons vegetable oil
  • 3/4 teaspoon ground ginger
  • 1 1/2 teaspoon garlic
Directions:
  1. Marinade steak for 30 minutes to an hour.
  2. Add oil to hot wok. If using scallions, stir fry for 20 seconds.
  3. With slotted spoon to reserve marinade, add steak to wok and stir fry for 3 minutes. (Can do half at a time, depending on size of wok.) Remove and set aside.
  4. Stir fry green peppers and water chestnuts for 2 minutes or until they shrink slightly.
  5. Add marinade. Stir until thickened and bubbly.
  6. Add in steak and scallions.
  7. Heat thoroughly.

You can eat this as is, but we usually serve on a bed of rice.
